 Do you know any Chinese restaurants where they cook with olive oil rather then use regular oil?

Answer Highly unlikely.Olive oil is too expensive [especially extra virgin, which can't be used for stir frying anyway].They use sunflower oil which has a high smoke point and is cheap to purchase.
